En el Día de la Gastronomía Sostenible, aprende con una chef experta cómo tus elecciones culinarias pueden contribuir a un planeta más verde, minimizando los desperdicios y valorando los productos locales.

Consejos de Chef para Transformar la Cocina en un Espacio de Sostenibilidad

El 18 de junio fue designado por la ONU como el Día de la Gastronomía Sostenible con el fin de fomentar una alimentación que utilice productos de temporada, respete y preserve las tradiciones culturales y se preocupe del medio ambiente.

Además, el objetivo es propiciar la compra de productos en mercados locales y el consumo de alimentos de temporada con el fin de reducir los gastos asociados al transporte y así disminuir los gases de efecto invernadero.

También recomienda planificar cuidadosamente los menús que se van a preparar para comprar solo lo que se va a necesitar y no verse obligado a botar alimentos a la basura. Según la FAO, cada año se bota un tercio de los alimentos producidos en el mundo.

María José Flores, chef de GISER, empresa dedicada a la alimentación en casinos, entrega consejos para aprender a sacar el máximo partido a los alimentos y generar menos desperdicios.

“Hay muchas maneras en los que podemos optimizar los recursos para preparar los platos que deseamos sin generar mayor basura. Por ejemplo, si vas a usar un limón la recomendación es pelarlo y echarlo completo a la licuadora, de esa manera tendremos el máximo de jugo de limón. Con la cáscara blanca y azúcar podemos hacer figuras decorativas para los platos y vasos. Por último, la cáscara del limón se puede utilizar para infusión” dice la chef.

Agrega que las cáscaras de las papas se pueden freír y convertir en una buena opción para picoteo. También cuenta que las cáscaras de tomate se pueden reutilizar para hacer salsa de tomate casera o bien, un pesto de tomate con albahaca y que con la cáscara del huevo se puede usar como abono para la tierra, al igual que las cáscaras de todos los vegetales que sirven para transformarlos en compostable.

“Lo más probable es que después del postre la persona quiera tomar un café. En este caso, también es posible generar cero basura, porque la borra del café se puede usar como abono para las plantas”, finaliza María José Flores, Chef de GISER.
